Rainbow Power Salad

June is all about rainbow power. And, delicious as it is, we’re not just talking about this salad! It’s Gay Pride Month, and we’re in celebration mode here at Ascend Body. This month is all about honoring the diversity that makes our gym, our city and our world, such a rich and beautiful place.


To celebrate, we wanted to create a recipe that’s as colorful as San Francisco. So here it is: the Rainbow Power Salad. Welcome to rainbow heaven, fully packed with a whole lot of vitamins, minerals and fiber. A useful rule of thumb in nutrition is to pack your plate with color. More color = more nutrients. Obviously, this rule doesn’t apply to processed foods. I.E. don’t dig into a bowl of skittles just yet. We’re talking about food that comes straight from Mother Earth, the kind of food that will revitalize and nourish your body so you can go out and chase your dreams. 


One more added bonus: this salad is packed with magnesium and calcium, which will reduce your stress and improve your mood. Top it all off with an extra portion of love this June, and you’re cortisol doesn’t stand a chance.

  • Kale (2 handfuls)
  • 1 cup quinoa
  • 1 cup chickpees
  • Half bell pepper
  • Handful of cherry tomatoes
  • 1/2 cucumber (Chunks)
  • 1 avocado
  • 1 lemon
  • 1 pomegranate
  • A few leaves of coriander
  • 1 beetroot
  • 4 slices lettuce
  • Chilli (1/2 of a hull)
  • Optional: Chicken stripes



  1. Prepare the quinoa and the chickpeas in two different pots by boiling water for about 15 minutes and allow the quinoa and the chickpeas to absorb the water 
  2. Cut the pepper, avocado, tomatoes, beetroot, kale and the cucumber in little pieces and put it into a big bowl
  3. Slice a little bit of the chili and the coriander and add it to the veggie mix
  4. Separate the pomegranate from it’s seeds and mix them down under the salad
  5. Cut the lemon in half and squeeze the juice over the salad. Mix everything together with the quinoa and chickpeas. If you want, you can add some fresh chicken stripes to the salad for some extra protein.
  6. Add 4 slices of lettuce to the curb of the bowl (bottom down) and enjoy your rainbow salad with a big smile on your face 😀
