Four Fun Ways to Cook With Coconut Milk

By Shane YoungMarch 9, 2015

Coconut milk has to be one of the most versatile foods on the planet! That seemingly simple can of creamy goodness is full of decadent flavor and absolutely perfect for everything from dinners to guilt-free desserts. Okay, I’ll admit it, I am completely obsessed and feel like I’m totally spoiling myself when I eat it. The best part… it’s healthy! Coconut milk is the dense liquid that results from pressing fresh, ripe coconut meat so it’s actually good for you. Use it for as a creamy base for curries, sauces, desserts, and to create flavorful, healthy smoothies.

Check out these four fun and incredibly simple ways to incorporate coconut milk into your day. Trust me, it won’t be long ‘til you’re running back to the store for more!

Coconut milk is a natural for breakfast; it has a consistency that’s similar to cow’s milk and can be used as non-dairy substitute in tea, coffee, or to replace yogurt in creamy smoothies. Since I’m always up early and on the go, I love being able to prep a nutritious breakfast the night before. This chia seed banana pudding using coconut milk packs a nutrient-dense punch, is absolutely delicious, and simple to prepare.

Lunch and Dinner

It’s easy to eat healthfully on a budget with a warming curried cauliflower soup. This soup is perfect for lunch or side dish at dinner and you can dress it up any way you’d like! I typically add parsley and toasted cashews as a nutty garnish.

Side Dish

I find it especially hard to adhere to gluten-free, paleo lifestyle when eating flavorful curries you just want to scoop right up with some Indian flatbread like naan or roti! This incredibly simple nut-free recipe for paleo roti can be made in just a few minutes and is sure to impress even the most skeptical diners.

Sometimes we all need something a little sweet that we won’t feel weighed down by at the end of the day. That’s why I’ve included this recipe for coconut ice cream. I know, the thought of making ice cream is a little scary but seriously, give this one a shot. It is the most easy and delightful treat. Plus, make a batch and store it in your freezer!
