Vietnamese Summer Rolls

Hello everyone out there! Today we’re going to talk about the importance of variation in your diet. In nutrition, the idea of varying up the foods you eat is important because it ensures  you get all the macro- and micronutrients your body needs. It’s a good reason, but to be honest, most people can get all the essential nutrients from eating 4-5 nutrient-dense meals a week. (Think: green smoothies).


On the other hand, we also know that our emotional systems react to food. So even if we can get all our nutrients from these same 4-5 meals 365 days a year, we probably won’t stay on track in the longterm. Because sooner or later, we’ll get bored. Our bodies and minds crave variation.


Todays recipe can be prepared in many different ways. These classic Vietnamese summer rolls are traditionally served with shrimps, but you can also use chicken, tofu or just greens. The preparation stays almost the same. No matter how you make them, these rolls are refreshing, light and enjoyable warm or cold.

Ingredients (for 6 rolls):

  • 6 rice papers
  • 12 baby carrots
  • Greens: basil leaves, lettuce 
  • 1 lime
  • 200 g of shrimp, chicken or tofu (vegan option)
  • Dip: 6 tsp unsweetened peanut butter, 3 tsp soy sauce, little bit water



  1. Heat up some butter or coconut oil in a pan 
  2. Fry the shrimp, chicken or tofu for around 3-5 minutes until done. At the same time, cut the baby carrots and the lime in half
  3. Wash the lettuce and the basil leaves
  4. Prepare a bowl with water to soften up the rice papers. Put each rice paper in the bowl for 30 seconds and then spread it out on a cutting board 
  5. Fill the middle part of your rice paper with all the ingredients, but leave some space to roll it together from the sides and above. Drop some fresh lime juice over the ingredients
  6. Then roll it together (tip: be fast, as quicker you are, as easier you can roll the rice papers, because they get sticky very fast on the cutting board)
  7. Repeat every step until you have your summer rolls prepared
  8. To prepare the dip, just get a little bowl and mix the peanut butter together with the soy sauce and some water until you get a creamy consistency
  9. Enjoy the summer rolls together with your protein based dip 🙂
