Chocolate Carrot Balls

Ascenders! There are 3 major things we can’t get enough of: Love, laughter and chocolate! Natural based chocolate is a great antioxidant deliverer and contains a lot of healthy fat. Today we are going to combine chocolate with quickly digestible carbs. Here’s why: when you burn all your energy after an intense workout out of your muscles and liver, your body needs this energy back asap to help your muscle fibers recover. That means we want to reach a controlled blood sugar peak after a workout.

Fruits and sweet veggies are a great options for that (and they taste so delicious!). Here’s the cool thing about our chocolate: When we combine it with fruits, we still get our fast energy peak, but the fat from the chocolate controls it in a way that keesp our energy level in balance. In other words: We get all the benefits of this delicious post workout snack, but don’t get tired! Isn’t that awesome? So, enough of this science talk, let’s get into it.

This is what you need: 


  • 1 cup finely grated carrots
  • 4 large Medjool dates
  • ½ cup almond flour
  • ½ cup pecans, chopped
  • 1 tablespoon flaxseed meal
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon cinnamon
  • ⅛ teaspoon salt
  • ⅓ cup + 1 tablespoon dark chocolate, chopped
  • 1 teaspoon coconut oil, melted




  1. Remove the pit from your dates, cut the carrots in small pieces and process in your blender until creamy and smooth.
  2. Add all the remaining ingredients, expect for the chocolate and the coconut oil and pulse until everything is combined.
  3. Roll the mixture into ball (about 1½ teaspoons per ball) and place them on a baking sheet lined with parchment paper.
  4. Place sheet in the freezer and go onto melting the chocolate.
  5. Slowly melt about 2 tablespoons of the chocolate in a bowl over simmering water.
  6. Remove from stove and mix in the coconut oil and more of the chocolate little by little until it’s all melted.
  7. Dip the chilled truffles one at the time in the chocolate and set it back onto the parchment paper.
