Cassava Flour Chocolate Chip Cookies

What is grain, gluten, and dairy free plus can put a big smile on your face? Well, if love is your answer, you’re close! The recipe we are sharing with you today is one that you will surely love: Healthy Cassava Flour Chocolate Chip Cookies.

Cassava (flour) is a great source of carbohydrates. It does not affect your blood sugar level as much as grains and it is loaded with a ton of water-soluble vitamins. Most importantly, it contains a lot of Vitamin C. Vitamin C has played a vital role in our body. It serves your body as a natural antioxidant. And if you combine Vitamin C with some fats that contain Vitamin E, it will boost your immune system to the next level because they reset each other from passive back to active form. This means they will continue to work and protect you, even when you get a little crazy!  Also, Cassava activates an enzyme inside of the liver which is necessary for detoxification processes (so be prepared over the holidays to support your liver function with a cookie ;)).

In addition, it attacks potential cancer cells and it is also important for the stress regulation in your body.  Also, we find almost every B-Vitamin inside of our cookies. To keep it simple: If you have them, you’ll more likely have a lot of energy and have a better stress response.

Grass-fed Butter

Last but not least I’d like to mention the perfect add-on to cassava: Grass-fed butter with its fat and cholesterol and also vitamin B12. B12 is vital for those who consume primarily plant-based foods.  Not just that, but you’ll get a muscle building booster that also stabilizes your blood sugar.

Having cookies without blood sugar rushes: We say hell yeah! 🙂 Oh btw: We talked earlier about Vitamin E, which can also be found in butter. Our supercookie punches any virus right in the face.

One last side note: Of course the cookies contain sugar. Remember, it’s not about cutting something out of your diet, it’s about finding better alternatives and still enjoying all the sweets. That’s the real secret of having long-term results :). Ok, talk is cheap, but actions are gold, so let’s dive right into the recipe.

Ingredients (for one dozen):

  • ½ cup maple syrup
  • 3 tbsp coconut sugar
  • 1/2 Cup grass-fed butter (1/2 cup), softened – make sure the butter is softened & not melted, otherwise, the cookies can spread too much during baking.
  • 1 Tsp vanilla
  • 1 Whole egg
  • 1 Egg yolk
  • ½ Cup + 2 tbsp cassava flour
  • ½ Tsp baking soda
  • ¼ Tsp Sea salt
  • ½ Cup of dairy free chocolate chips

  1. Preheat oven to 375.

  2. In a large mixing bowl cream together sugars, maple syrup, butter, vanilla, egg & yolk.

  3. Once they are well combined, add in cassava flour, baking soda & sea salt.

  4. With a spatula, fold in chocolate chips.

  5. Using a small spoon, place in rounded scoops on a lined baking sheet.

  6. Place in the oven & bake for 10 minutes.

  7. Remove from oven & cool on a cooling rack.
