Vegetarian Zucchini Boats

New Year incoming, wohoo! A new year presents a fresh start to chase your dreams, improve yourself, and stick to your resolutions. One very common New Years resolution is to lose weight and eat healthy. Well today we’re going to help you reach that goal, by sharing the perfect, low-calorie recipe to fill you up with all the right micronutrients!


This dish revolves around zucchinis. Zucchinis are low in calories, sugar and carbohydrates, making them a dietary staple for weight loss. But more importantly, zucchinis are a micronutrient powerhouse because they’re loaded with potassium, manganese, vitamin A, folate and vitamin C. This recipe uses zucchinis differently than your typical veggie stir-fry or bake, by loading them up with more veggies and healthy fats.  By the way, fun fact: Did you know that some zucchinis can grow up to 39 inches? Pretty impressive, right? Well for our recipe you don’t need a 39 inch zucchini, but you do need two zucchinis big enough to load with fillings.


So let’s get to it! Note: if you want, you can leave the cheese out to make the zucchini boats vegan. 


Ingredients (for 4 Zucchini boats):

-2 large zucchinis

-½ bunch of fresh basil

-5 oz tomato paste

-sea salt & pepper

-1 red onion

-10 cherry tomatoes 

-2 oz sliced olives

-optional: 1 oz of parmesan



  1. Preheat the oven to 450°F.
  2. Wash the zucchinis and cut in half. Scoop out the zucchini’s seeds so you can fill em’ up! Then wash and halve the 10 cherry tomatoes. 
  3. Mince the onion, chop the basil and mix them together with the tomato paste, salt, pepper and olives in a small bowl.
  4. Fill the zucchini halves with the sauce and bake for 10 minutes, then sprinkle on parmesan and bake for another 5 minutes or until cheese is melted. 
  5. Enjoy your boats 🙂
