Simple & Delicious Anti-Inflammatory Ginger Gummies

Serves: 20

 INGREDIENTS

  • 2 cups water
  • 1 tablespoon ground turmeric
  • ¼ cup + 1 tablespoon honey
  • 2 tablespoons lemon juice
  • 1 tablespoon finely grated ginger
  • 4 tablespoons unflavored gelatin powder

INSTRUCTIONS

  1. Add water to a small pot and bring to a boil. Remove from heat and stir in turmeric, honey, lemon juice, and ginger. Mix well.
  2. Sprinkle gelatin powder over the liquid and whisk vigorously for about 1 minute, or until gelatin is completely dissolved.
  3. Pour into an 8-by-8 baking dish or candy molds. Make sure the mixture has cooled completely (for several hours or overnight) before cutting into squares or removing from the molds.
  4. Store in an airtight container. Will keep up to 7 days in the refrigerator.
