2 Ingredient Paleo Mini-Pancakes

 

Is there a more traditional American breakfast than a delicious stack of pancakes? We all love them, despite knowing they don’t make the healthiest breakfast choice. Normally, pancakes are loaded with processed sugar, which increases your risk of Type 2 Diabetes and piles on the pounds. Another problem with pancakes is that they’re made with flour. Flour contains gluten- a protein commonly found in wheat that sticks to our guts and makes it harder to digest the other ingredients in our food. In the long term, gluten can cause leaky-gut syndrome and prevent digestion of the macros and micros your body needs.

 

So should we all just stop eating pancakes? No!

 

Our two ingredient mini paleo pancakes are a healthy variation of the breakfast you love. They don’t contain processed sugars or flour and are full of protein. This helps balance your blood sugar so you don’t crave carbs an hour after eating. Enjoy them warm at home or take them with you to work. Even cold they are still delicious. #letsgopaleo

 

Ingredients

  • 1 organic banana
  • 2 organic eggs
  • optional: cinnamon, 1 scoop of protein powder, berries, unsweetened peanut butter, organic honey

 

Preparation

  1. Melt a little slab of butter in a pan.
  2. Put the banana and the two eggs in a blender and mix them. Optional: add cinnamon and 1 scoop of protein powder before mixing.
  3. Ladle half the “dough” into a pan and fry it on one side for 1-2 minutes.
  4. Use a spatula to cut the pancake into four pieces. This ensures the pancake won’t break apart.
  5. Turn the pancake pieces over and fry them for 1-2 minutes. Place on plate.
  6. Repeat with second half of dough.
  7. You can top your paleo pancakes with berries, unsweetened peanut butter and/or organic honey.
