Lamb Sausage with Peppers and Herbs

You haven’t had a truly great morning until you’ve tried these lamb sausages. Ground lamb is very popular in my house because it’s very versatile and makes, among other things, delicious sausages and meatballs. This dish is wonderful for breakfast but it would also make a great lunch or dinner, as it’s not spiced specifically with breakfast in mind. It’s bursting with herb and pepper flavor with just a tiny kick from cayenne. It goes really well with roasted Delicata Squash.

Ingredients

  • 1 lb (454 g) ground lamb

  • 1 tsp fennel seeds, ground

  • 1 tsp dried sage

  • ½ tsp dried rosemary, ground

  • ¼ tsp cayenne pepper

  • ½ tsp pepper

  • ½  tsp salt

  • 1 tsp onion powder

  • 1 tsp granulated garlic

Instructions

Mix all ingredients well and form sausage patties or logs. Sauté on all sides until completely cooked through, about 20 minutes total.
