That seemingly simple can of creamy goodness is full of decadent flavor and absolutely perfect for everything from dinners to guilt-free desserts. Okay, I’ll admit it, I am completely obsessed and feel like I’m totally spoiling myself when I eat it. The best part… it’s healthy! Coconut milk is the dense liquid that results from pressing fresh, ripe coconut meat so it’s actually good for you. Use it for as a creamy base for curries, sauces, desserts, and to create flavorful, healthy smoothies.

Coconut milk is a natural for breakfast; it has a consistency that’s similar to cow’s milk and can be used as non-dairy substitute in tea, coffee, or to replace yogurt in creamy smoothies. Since I’m always up early and on the go, I love being able to prep a nutritious breakfast the night before. This chia seed banana pudding using coconut milk packs a nutrient-dense punch, is absolutely delicious, and simple to prepare.
Lunch and Dinner
It’s easy to eat healthfully on a budget with a warming curried cauliflower soup. This soup is perfect for lunch or side dish at dinner and you can dress it up any way you’d like! I typically add parsley and toasted cashews as a nutty garnish.
