Hello everyone out there! Today we’re going to talk about the importance of variation in your diet. In nutrition, the idea of varying up the foods you eat is important because it ensures you get all the macro- and micronutrients your body needs. It’s a good reason, but to be honest, most people can get all the essential nutrients from eating 4-5 nutrient-dense meals a week. (Think: green smoothies).
On the other hand, we also know that our emotional systems react to food. So even if we can get all our nutrients from these same 4-5 meals 365 days a year, we probably won’t stay on track in the longterm. Because sooner or later, we’ll get bored. Our bodies and minds crave variation.
Todays recipe can be prepared in many different ways. These classic Vietnamese summer rolls are traditionally served with shrimps, but you can also use chicken, tofu or just greens. The preparation stays almost the same. No matter how you make them, these rolls are refreshing, light and enjoyable warm or cold.
