Christmas Paleo Cookies

Cookies…omg yes! We all want them and we want them all. Cookies are delicious and, with Christmas coming up, they’re everywhere. We don’t have to tell you that cookies aren’t exactly the best choice nutrition-wise. You probably already know the problems with them: namely too much processed sugar and a whole lot of gluten from the wheat flour. 

 

So is all hope for cookies lost? No! What would Christmas be without Santa’s favorite treat? Today, we’ll give you a healthier version of the holiday classic by slashing the processed sugars and cutting down the gluten. Easy peasy. So grab a baking sheet, spend time baking with your family, and fill your house with the smell of cookies!  Always remember: You don’t have to give up all treats to be healthy. Especially around the holidays, you should indulge in some of the food you’re craving. But make sure to be fully aware while you’re eating. That way you’ll enjoy the experience even more and prevent mindless munching. So, here they come, our Christmas Paleo cookies…

Ingredients (for 20 paleo cookies):

  • 1 1/2 cups raw pecans
  • 3 tablespoons coconut rasps
  • 1/2 cup almond flour
  • 2 tablespoons arrowroot starch
  • 1/2 tablespoon baking soda
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons raw honey
  • 2 tablespoons coconut oil
  • 1/2 cup of mini soy/dairy free chocolate chips
  • Sea salt
  • 1 egg

 

Instructions:

  1. Preheat oven to 350°F. Then lightly grease a baking sheet with coconut oil.
  2. Place the raw pecans in a blender or food processor and pulse until pecans are ground.
  3. In a medium mixing bowl combine the ground pecans, coconut flour, almond flour, arrowroot starch, baking soda and salt.
  4. In a separate bowl combine the egg, vanilla, syrup and (cooled) oil. Mix all ingredients together. Then stir in the mini chocolate chips.
  5. Shape the dough into 20 cookies and flatten the dough slightly onto the greased pan. Put the cookies in the preheated oven and bake for 12-15 minutes.
  6. Take the cookies out of the oven and allow to cool on the pan for 5 minutes.
