Chia seeds are an ancient super food used by the Aztec runners and are now going through a modern day revival for its high Omega 3 and fiber content. It’s claim to fame are, controlling blood sugar, improving digestion, controlling inflammation, improving mood, glowing skin, and the list goes on. Miracle food? Maybe for some, as only 10% of the population can convert the alpha linolenic acid into a useful form of omega 3 fatty acids. Also, it is a seed so it does contain the anti nutrient, phytic acid. Keeping that in mind, they make a delicious pudding.
2 Tablespoon Chia seeds*
1/2 cup organic full fat coconut milk (I prefer Thai Kitchen brand)
3/4 cup filtered water
6 Drops SweetLeaf’s Stevia Clear liquid
1 Tsp. Vanilla Powder
½ Tsp. Cinnamon
1 Tablespoon organic cacao powder
Place all ingredients except for Chia seeds in a 2 cup mason jar.
Shake vigorously to mix.
Add Chia seeds to the liquid mixture, shake well and let sit in fridge overnight.
Grab out of fridge and enjoy!
*Chia seeds absorb 7 times its weight in liquid. It is best to hydrate for a few hours before consuming. Also, depending on the brand of the Chia seed the thickness varies so play with the liquid to seed ratio to your liking.
