Chicken with Coconut Dill Sauce

Ingredients:

Chicken:

  • 8oz bone in chicken leg /thigh or combination thereof
  • 2 garlic cloves, minced (mince 10 minutes before cooking to reap all the good health benefits of garlic)
  • 1/4 teaspoon. paprika
  • 1/8 teaspoon. allspice
  • 1/8 teaspoon. ground nutmeg
  • 2 tbsp. olive oil
  • Juice of 1 limes
  • Fresh chives, minced
  • Salt and freshly ground black pepper

 

Coconut-dill sauce:

  • 1 garlic cloves, minced (mince 10 minutes before cooking to reap all the good health benefits of garlic)
  • 2 tbsp fresh dill, minced
  • 3/4 cup coconut milk /coconut cream
  • 1 tbsp. olive oil
  • Juice of ½ lemon or lime
  • Salt and freshly ground black pepper

Instructions:

  1. Preheat a grill or oven to 425
  2. In a bowl, combine together the minced garlic, nutmeg, allspice, 5 tbsp. olive oil, lime juice, and season with salt and pepper to taste.
  3. Brush the chicken, with the garlic-olive oil mixture. Place the chicken thighs on the grill, and cook for 5 to 6 minutes per side.
  4. While the chicken is cooking, mix all the ingredients for the coconut sauce together and season to taste.
  5. Drizzle fresh chives on top of the chicken and serve with the dill sauce.
  6. Enjoy!
