Long ago and far away, Shane used to be allergic to eggs. Now that his digestion and overall health are getting better and better, many of the problems that have irritated him for a long time are simply melting away. And what a blessing. Cause these eggs are really pretty good…
We had Breakfast for Dinner tonight, and I decided to go with a Spanish theme, so below you’ll see:
Followed by a dozen pasture raised eggs:
When I cook ‘scrambled’ eggs, I will often cook them over a water bath like you see here. It is a French technique, and it cooks the eggs very gently, keeping them remarkably creamy and totally yummy. I also added a little coconut oil for good measure. Fat is our friend 🙂
They kind of end up looking like a custard. Here’s a look:
Here is the chorizo, ready for action. This was a Whole Foods brand, and the aromatics were really nice, a little cinnamon and chiles, plenty of paprika, and a little bite but still pretty tame.
Here’s the end result. A little spinach salad dressed with olive oil and apple cider vinegar / creamy (dreamy) eggs / fresh chicken chorizo
Now that Shane’s body loves eggs, we indulge in one huge day of eggstravagance… almost weekly. It reminds us how well the body can heal itself, and our big egg blow-out is also a celebration of some of Mother Natures’ most perfect foods. Thanks for reading. Eat well, and be well- Scotty
