The Chicken and Peach Firecracker wrap has it all: great protein, some good fats and incredible flavor. This two minute recipe is a great lunch option for your busy day.
1 tbsp (10 g) fruit-sweetened
1 tbs chopped hot pickled peppers
4-6 oz (112-170 g) roasted chicken breast
2 slices bacon
4 large lettuce leaves
(Makes Two Wraps)
To make the sauce, combine the peach preserves with the pickled peppers. To assemble each wrap, first add half the chicken to a large lettuce leaf. Top with half the peach sauce then 1 slice of bacon. Add a few twists of freshly ground black pepper. Cover with the second leaf. To pack for the office, wrap the entire sandwich in a paper towel then in a sheet of tinfoil.
