5 Surprisingly Simple – Yet Scrumptious Paleo Appetizers

Just because you have decided to change your diet and eat in a more wholesome way to support your health and wellbeing, doesn’t mean you need to forgo the pleasure of fine food. Nor does it mean that your dinner parties have to suffer for it. These following 5 appetizers are not  only easy to prepare and delicious to enjoy, they will please all your guests, whether they eat Paleo or not!

Olive, Prosciutto & Pineapples Nibbles

Getting Prepared: This is an incredibly simple recipe that provides the flavour of a supreme pizza in one bite sized piece! All you need:

  • Half a pineapple, cored, peeled and sliced into bite sized chunks.
  • 20 pitted Kalamata olives (Or as many olives as you wish to make of the nibbles)
  • 1 packet of prosciutto torn into individual pieces,
  • 20 toothpicks or tiny wooden party forks.

Creating The Masterpiece: Creating mouth-watering appetizers couldn’t be more simple; holding the toothpick in one hand, slide the olive down halfway, then fold some prosciutto up and slide it on after the olive. Finish it off by turning it upside down into a piece of fresh pineapple and put your finished appetizer on your serving tray and continue until you have enough!

 

Bacon Wrapped Dates

Getting Prepared: Another sweet and savoury treat, this appetizer may require a little cooking time, however it is very delicious and is likely to disappear off your plate as soon as they have cooled enough to eat! All you need is:

  • 1 packet of bacon (approximately 10 slices)
  • 20 whole, pitted dates
  • 20 toothpicks, pre-soaked for a few minutes to avoid them burning.

Creating The Masterpiece: Preheat your oven to 450 degrees. Slice the bacon into half length ways then arrange a single layer on a plate and place in the microwave for 2 minutes. Repeat until all the bacon is partially cooked. This helps to not only ensure your bacon crisps up well, but that it also makes it easier to wrap the strips around the dates! Then once the bacon has cooled enough to handle, wrap each date in a strip of bacon before securing with a toothpick and placing on a tray ready to be baked in the oven. When all the dates and bacon has been used up, place the tray in the oven and bake for approximately 10 minutes, though check after 5 to make sure they are not burning. A little tip here is that bacon tends to continue to crisp a little after being removed from the heat, so bare this in mind when deciding whether they are cooked enough. Once done, remove and allow to cool slightly before transferring to your serving plate.

Nutty Yam Stuffed Mushrooms

Getting Prepared: This appetizer has the look and taste of hours of hard work, but can be whipped up fairly effortlessly in 30 minutes! All you need is:

  • 1 large yam, peeled, diced and steamed.
  • 20 small cup mushrooms, stalks removed.
  • 1 large clove of garlic, minced
  • 2 Tbsp. Crushed walnuts
  • 1 tsp. Olive oil

Creating The Masterpiece: Preheat your oven to 350 degrees. Heat olive oil in a skillet over medium heat and lightly cook the garlic until it begins to go transparent in colour. Instantly remove from heat and combine with yam and walnuts in a large bowl. Mash to a consistency of your liking, then season with a little salt and pepper to taste. Lightly spray a baking tray and then arrange your mushrooms upside down on the tray, scooping a spoonful of your yam mixture on top. When finished bake for 20-25 minutes. Remove from oven and transfer to a serving plate.

 

Guacamole With Carrot Dippers

Getting Prepared: This simple recipe can be whipped up in minutes and requires no cooking! All you need is:

  • 3 ripe avocados
  • 3 large carrots, peeled and cut into cup-like sticks.
  • 1 ripe tomato, seeds removed and finely chopped
  • 1 garlic clove, minced (more if you love garlic!)
  • 1 large lemon, juiced
  • 1 Tbsp. Fresh cilantro leaves, chopped
  • ½ tsp. Cumin powder
  • ¼ tsp. Himalayan salt
  • ¼ tsp. Ground pepper

Creating The Masterpiece: In a large bowl, combine the avocado and lemon juice and mash with a fork until you have the consistency you desire (either smooth or lumpy). Add tomato, garlic, cilantro and spices and fold together with a fork until well combined. Transfer to your serving bowl alongside your carrot sticks, and you are ready to go!

Mouthwatering Kofta Meatballs

Getting Prepared: These delicious bite sized meatballs can be dunked into your favorite dip or eaten just as they are! All you need is:

  • 2 lbs. Ground lamb mince (beef, chicken or pork also work)
  • 1 large red onion, finely chopped
  • 1 garlic clove, minced
  • 2 eggs
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup fresh mint leaves, finely chopped
  • 1 Tbsp. Dried oregano
  • 1 Tbsp. Cumin powder
  • 1.5 tsp. Himalayan salt
  • 1 tsp. Pepper
  • 20-30 toothpicks, or mini wooden forks

Creating The Masterpiece: Preheat your oven to 375 degrees, and prepare a large baking tray by lightly greasing it. Combine all the ingredients into a large bowl then begin to roll the mixture into golf sized balls, before spacing them out on the baking tray. Once the tray is filled, bake in the oven for 20-25 minutes, or until just cooked through, then remove and place under the broiler or grill, for a further 3 minutes to give you that crispy finish. Spear each meat ball with a toothpick and transfer onto your serving dish.
